
Bacon Wrapped Pork Tenderloin

Ingredients
- 10–12 slices Nueske’s Applewood Smoked Bacon
- 1 Pork Tenderloin (approximately 1.5 lbs.)
- 1 Tsp. Fresh Thyme Leaves, chopped
- 2 Tbsp. Dijon mustard
- 1/4 cup Honey
- 1 Tbsp. Favorite Barbecue Sauce
- Salt and freshly cracked black pepper, to taste
Method
- Preheat oven to 375°F. Position the oven rack in the center and line a baking sheet with aluminum foil.
- Season the pork tenderloin with salt, pepper, and chopped thyme. Spread Dijon mustard evenly over the surface of the pork.
- On a cutting board lined with parchment paper or foil, arrange the bacon slices slightly overlapping to form a rectangle. Place the tenderloin in the center and wrap the bacon tightly around the pork. Transfer the tenderloin to the prepared baking sheet and place seam-side down.
- Whisk together the honey and barbecue sauce. Brush half of the glaze over the bacon-wrapped tenderloin.
- Bake for 20 minutes, then remove from the oven and brush with the remaining glaze. Return to the oven and continue cooking for 10–15 minutes, or until the internal temperature reaches 145°F.
- Remove from the oven and let rest for 5 minutes before slicing. Serve warm and enjoy.
- Serving Tip: Pair with roasted vegetables or a crisp green salad for an impressive meal.
