Ingredients
- 2 Cup Nueske's Smoked Spiral Sliced Boneless Ham, diced
- 2 Carrots, peeled and diced
- 2 Celery Stalks, diced
- 1 Medium Yellow Onion, diced
- 30 oz Chicken Broth
- 5 Medium Red Potatoes
- 5 1/2 Tbsp Butter, divided into 3/4 inch cubes
- 3/4 tsp Dried Oregano
- 1/2 tsp Dried Thyme
- 1 Bay Leaf
- 2 Cups Fresh Corn
- 1/4 Cup All-Purpose Flour
- 2 1/2 Cups Milk
- 1 Cup Heavy Cream
- 6 Slices Nueske’s Applewood Smoked Bacon, cooked and diced
- 3 Garlic Cloves, diced
Method
- Sauté celery, carrot, and onion until soft.
- Cook bacon in oven at 375 degrees for 12 minutes.
- Add potatoes, chicken stock, garlic, and herbs. Cook for 15 minutes or until potatoes are tender. As soon as potatoes are fully cooked, add ham and corn into soup with heavy cream & milk. Bring back to a boil.
- Melt butter and flour together to form roux. Whisk into soup to thicken.
- Serve and garnish with chive & diced bacon.
