The Bacon Poke Bowl is a vibrant dish featuring Nueske’s Triple Thick Butcher Cut Bacon, warm rice, and fresh vegetables, topped with a tangy Ginger Lime Dressing. This quick and flavorful bowl is ready in 40 minutes, offering a delicious mix of savory bacon, crisp veggies, and zesty dressing.
Ingredients
- 12 Slices Nueske Triple Thick Butcher Cut Bacon, cooked and cut into bite size pieces
- 4 cups favorite cooked rice, warm
- 6-10 Butter lettuce leaves, torn
- 1 1/3 cup slivered red cabbage
- 1 1/3 cup fresh carrot “noodles” or shreds
- 1 1/3 cup edamame, thawed
- 4 sliced or diced jalapenos
- 4 scallions, clean and sliced on bias
- 1 cup fresh mint leaves and or cilantro, torn
- Lime wedges
- Ginger Lime Dressing
- 1 cup fresh lime juice
- ¼ cup honey
- ½ cup soy sauce
- ¾ cup vegetable oil
- ¼ cup sesame seed oil
- 4 pieces 1-inch fresh ginger, peeled and minced
- Pinch of red pepper flakes or several dashes of Sriracha to taste
Method
- Clean and prepare all vegetables (tear butter lettuce, cut cabbage into slivers, shred carrots into “noodles”, slice or dice jalapenos, cut scallions on the bias and tear mint leaves and/or cilantro). Make the Ginger Lime Dressing (can be prepared in advance). Cook Nueske’s Triple Thick Butcher Cut Bacon pieces.
- Add rice to a serving bowl and drizzle 1-2 tablespoons of the ginger lime dressing over the rice. Assemble vegetable toppings and Nueske’s Triple Thick Butcher Cut Bacon pieces over the rice. Dizzle desired amount of dressing over all and serve.
- Add all ingredients to a mixing bowl and whisk together. Store in an airtight container in refrigerator for up to a week.
