  • 2 Applewood Smoked Duck Breasts (12 oz)
  • 1 Loaf Sourdough Bread
  • 5 oz Goat Cheese
  • 4 oz Cream Cheese
  • 2 1/2 oz Boursin Herbs & Cheese
  • 1/2 tsp Salt
  • 1/4 Cup Milk


  1. Let all ingredients (besides milk) sit out at room temp for 1 hour prior to mixing.
  2. Combine all in robo coupe and whip.
  3. Assembly: Cut sour dough loaf into ½ inch thick slices. Spread boursin goat cheese on bread, thinly slice duck breast and cover base layer, squeeze 1 lemon onto arugula and toss. Place arugula on top of duck, drizzle with mike’s hot honey, and garnish with maldon sea salt & candied fennel pollen.
