Butternut Squash & Ham Soup

Ingredients
- 2 Cups Nueske's Applewood Smoked Spiral Sliced Boneless Ham, diced
- 3 lbs Butternut Squash
- 1/2 Cup Heavy Cream
- 1/2 Yellow Onion
- 1 Red Apple
- 1 Tbsp Sage & Rosemary
- 5 Garlic Cloves
- 2 Tbsp Ginger Puree
- 4 Cups Vegetable Stock
- 1 Cup Brown Sugar
- 2 Tbsp Salt
Method
- Skin butternut squash, then dice. Cook at 400 for 1 hour. Then puree in food processor.
- Saute onion, fresh sage, and fresh rosemary.
- Combine all ingredients in pot and bring to a boil. Then simmer for 30 minutes and puree again with a mixing wand.
- Pan sear diced ham and garnish on top of soup with sour cream.
