Ingredients

  • 2 Cups Nueske's Applewood Smoked Spiral Sliced Boneless Ham, diced
  • 3 lbs Butternut Squash
  • 1/2 Cup Heavy Cream
  • 1/2 Yellow Onion
  • 1 Red Apple
  • 1 Tbsp Sage & Rosemary
  • 5 Garlic Cloves
  • 2 Tbsp Ginger Puree
  • 4 Cups Vegetable Stock
  • 1 Cup Brown Sugar
  • 2 Tbsp Salt

Method

  1. Skin butternut squash, then dice. Cook at 400 for 1 hour. Then puree in food processor.
  2. Saute onion, fresh sage, and fresh rosemary.
  3. Combine all ingredients in pot and bring to a boil. Then simmer for 30 minutes and puree again with a mixing wand.
  4. Pan sear diced ham and garnish on top of soup with sour cream.
