Smoked Pepper Bacon Cups with Macaroni and Cheese

Ingredients

  • 24 Slices Nueske’s Smoked Pepper Bacon
  • 12 Slices White or wheat bread
  • Melted butter or oil
  • Prepared favorite macaroni and cheese recipe, warmed

Method

  1. Preheat oven to 350°F.
  2. Line two rimmed baking pans with foil and lightly grease a 12-cup muffin tin.
  3. Use a 2-inch round cookie cutter to cut circles of bread. Place the bread circles at the bottom of each muffin cup and brush with melted butter or oil. Bake for 6 to 8 minutes, or until the bread begins to toast. Remove from the oven and set aside.
  4. Arrange the bacon on the lined rimmed baking pans and bake for 12-16 minutes, or until it is partially cooked but still pliable (about halfway baked).
  5. Remove from oven and place bacon strips on a tray to cool slightly. Once bacon has cooled, line each muffin tin cup with two slices of bacon by carefully placing the bacon between the bread bottom edges and the muffin tin cup sides.
  6. Roll 12 small balls of foil and place them in the center of the bacon lined muffin cups to help hold the bacon in place while baking. Bake 12 to 17 minutes or until the bacon is crispy.
  7. Take the pan out of the oven and let the bacon cups cool for a few minutes. Remove and discard the foil balls.
  8. Carefully take the bacon cups out of the pan, spoon a generous amount of warm prepared macaroni and cheese into each cup, and serve.
