
Sausage Breakfast Casserole
A hearty and crowd-pleasing dish, this Sausage Breakfast Casserole combines savory Nueske’s sausage, crispy hash browns, fluffy eggs, and melty cheddar cheese.

Ingredients
- 1 lb. Nueske’s Ham and Bacon Sausage, cut into 1” thick coins
- 3 Tbsp. vegetable oil, divided
- 1 30 oz. bag frozen shredded hash browns
- 12 large eggs, whisked
- 1 1/4 cups whole milk
- 1 1/2 tsp. salt
- 1 tsp. black pepper
- 2 cups shredded medium or sharp Cheddar cheese
- Chopped parsley, chives or chervil, if desired
Method
- Preheat oven to 350 degrees. Lightly mist a 13”x 9” baking dish with non-stick cooking spray.
- In a large non-stick skillet, heat 1 tablespoon of oil over medium heat. Add sausage pieces and cook, stirring frequently, until browned on all sides. Remove from the pan and set aside. In the same skillet over medium-high heat, add the remaining 2 tablespoons of oil and half the hash browns. Sauté until golden brown, then transfer to a plate. Add the remaining hash browns and cook in the same way
- In a large mixing bowl, whisk together the eggs, milk, salt, and pepper. Stir in the cooked sausage, hash browns, 1 1/2 cups of cheddar cheese, and chopped herbs until well combined.
- Pour the mixture into the prepared baking dish. Top with the remaining cheese and bake for about 35 minutes, or until the center is set. Serve warm.
